The esteemed Porter restaurant, known for its longstanding tradition as a brasserie is turning up the heat with the addition of a smoker. To perfect this new venture, we traveled to the southern United States to explore the region’s authentic flavors and discover what would best complement Porter’s menu. We commissioned a custom-built smoker from Ole Hickory Pits, a leading American company, tailored to our specific requirements and dimensions. Since its arrival, we’ve been smoking a wide variety of meats, bringing bold new flavors to our offerings.
